Katsuo Fish with Cherry Buds (魚づくし 鰹に桜) is a famous woodblock from legendary ukiyo-e artist Utagawa Hiroshige (歌川 広重). This Japanese artwork was part of the series Uozukushi. Loosely translated to “Every Variety of Fish,” Uozukushi is some of the world’s finest seafood art.

Katsuo (鰹) is also known as bonito. It’s an important fish in Japanese cuisine. The dried filets are shaved to make katsuobushi, AKA: bonito flakes. Even if you didn’t realize it, you’ve likely tasted these before. This is because it’s a major ingredient in dashi. And dashi stock is used in all kinds of things like miso soup, agedashi tofu, and tempura udon.

And katsuo nigiri and sashimi are also popular sushi bar items.

The other component of this design is the sakura (桜), which means cherry. And in this case, it refers to cherry blossom buds and leaves. The sakura buds reference the spring season when this katsuo was caught.
